Ingredients:
250 gm capsicums-sliced250 gm potatoes-boiled, peeled and cut
to match capsicums125 gm onions-sliced thick125 gm tomatoes-sliced a little
thicker than the onions1/4 cup oil1 tsp cumin seeds2 tsp powdered coriander
seeds2 tsp salt1/2 tsp turmeric1/4 tsp garam masala1/2 tsp powdered red pepper1
tbsp coriander leaves to garnish
Method:
Heat oil and add the cumin seeds. When the seeds splutter,
add the onions and saut?ver high heat, till glossy.Add the tomatoes, coriander
powder, salt, turmeric, garam masala and red pepper, and stir fry till the
vegetables look coated with the spices and oil.Add the capsicums and potatoes;
lower the heat and saut?ill the capsicums become slightly limp (half cooked).
Serve hot garnished with the coriander leaves.
